Introduction
Wallett's Court Hotel is situated near Dover, Kent with restaurant and Spa. The hotel has at its heart an ancient manor house which nestles in wild open landscape. Dream of times gone by as you climb the Jacobean staircase to one of three four poster bedrooms in the centuries old manor or stroll across the courtyard to one of fourteen contemporary rooms housed in converted Kentish hay barns surrounding the grand old house.
History to the present day
Wallett's Court has a long history dating back to the Domesday Book of 1086. The Grade 2 listed hotel is brimming with historical features including carved oak pillars and beams dating from 1627, 14th Century fresco wall paintings in the upper corridor, a priest hole running down the side of the chimney in the restaurant, inglenook fireplaces in the bar and drawing room and a relic behind the bar most evenings.
There is also a Roman type well within the courtyard that drops 300 feet and today supplies the hotel with its own bottled water.
Royal connections with the nearby Dover Castle lend weight to claims that Queen Eleanor of Castille and her son Edward (who later became King) were in residence here. Before them Bishop Odo, the half brother of William the Conqueror was a notable resident. Later Lord Aylmer (Lord Warden of the Cinque Ports) and Prime Minister William Pitt the Younger used the manor as a country retreat.
Food and Drinks
Oakley and Harvey – The Restaurant at Wallett’s Court is the beating heart of the hotel. Headed up by Restaurateur Gavin Oakley and kitchen genius head-chef Steve Harvey, whose passion and flare put Wallett’s Court firmly on the gastronomic map. Throughout the creative culinary process they adhere to their values of community and partnership by the use of local and seasonal produce yet enjoy the freedom to explore further and discover excellence from beyond the locality. Foodies, bon-viveurs and gastronomes come from far and wide to indulge in a dining experience within the walls of Wallett’s.
Kick back in front of the open fire in the bar in winter or on the terrace in summer and drift away for a while. Drink where and when you like, champagne in the bath, sundowners at cocktail hour, great whites and elegant reds with dinner.
